102 and COUNTING!!

Meet our Favorite Fanatic : Kristin Pizzi (on left)

My Aunt Nanette just cannot stop talking about this awesome girl!  Kristin is the author of eatoxygen.com; a food journal/blog/recipe website dedicated to healthy eating and living.  She is a healthy eater, weight-lifter, and huge runner (she once ran 100 MILES!  is that really possible?  i mean, honestly.  incredible.)  Kristin also has a twin sister!  How cool!

But our favorite thing about Kristin is that she is a Krema FANATIC!  I think she must eat one of our nut butters at every meal!  Well, maybe not every meal but her Krema consumption is definitely close to a daily occurrence ;-)   How can we not love that??  But to top it off – Kristin raves about our products on her blog all the time!  She manages to incorporate our yummy PB varities in tons of healthy, delicious recipes and snacks.  So far, she has tagged Krema Products in 102 different posts on her blog And her blog is less than a year old!

Here’s an easy, scrumptious-looking recipe I borrowed from Kristin’s blog…there are soooo many to choose from!  I picked this one because I know I can never make this dish in my own house (darn allergic-to-cashews husband of mine) and I am just SALIVATING at this photo!

Kristin says, “DINNER: MY FAVORITE! Krema Products Crunchy PB and Cashew Stir Fry.”

- One tablespoon Krema Products Crunchy Peanut Butter
- veggies: onion, summer squash, cabbage, carrots
- kikkoman teriyaki sauce
- 1/2 ounce cashews

Wow.  Wow.  WOW!!!  Thanks for loving us so much Kristin!  Its Fabulous Fanatics like you who help keep our nutty family smiling at the end of the day :-)   Here’s to your 102 and counting blog posts!  Keep it up!  We LOVE it!!

p.s.  Hey Aunt Nanette – would you please send this girl a t-shirt?  I need a photo of her wearing one of our “We’re Totally Nuts!“  t-shirts.  Plus, she totally deserves one ;-)

Sammy of the Week : Flatbread Flaxseed

My mom just introduced me to a fun new flatbread : Arnold Select Sandwich Thins.  Only 100 Calories each, these thins come in a variety of flavors and have 4g of protein and 5g of fiber!  Plus they are loaded with cracked wheat a seeds throughout which give them an added yum factor :)

To make a Flatbread Flaxseed Sammy, use these Sandwich Thins or a copy-cat version like Pepperidge Farm Deli Flats.  Put a few spoonfuls of 100% all-natural Krema Crunchy PB in a small bowl and add about a Tablespoon of 100% natural, ground flaxseed (sold in most grocery stores).

Mix the PB and flaxseed together and spread the combo onto an inside layer of the Sandwich Thins.  Layer the other side with some raw honey or a natural fruit spread and stick them together.

Enjoy the grainy, nutty-ness of the peanuts, flaxseed and cracked wheat in this delicious Sammy of the Week!

Newest Addition To Our Nutty Family!

Meet Baby Bruce : Baby_hungry___Here are the Fruitcake Sisters, my mom (left) with my Aunt Nanette (right), and the newest little peanut to fall off of our nutty family tree :)   He is my cousin Danny’s first son and my Aunt Nanette’s newest grandson – Bruce Wayne!!  He is named after both of his great-grandfathers, one named Wayne and the other Bruce (who is my grandfather).  Baby Bruce was born on Friday, February 19th and he weighed 8 lbs. 14 oz!  (I think his mother was snacking on lots of PB sandwiches while she was pregnant – smart girl ;) )

Meet My Grandfather, Bruce : This is me and my amazing Grandfather making Whole Wheat Pancakes (though I can never quite make them as yummy as he can).  My Grandpa is awesome.  So kind and compassionate, he is truly incredible.  Though his only two daughters are the self-proclaimed “Fruitcake Sisters,” I think the rest of us have turned out pretty well ;)   J/K mom and Auntie Nanette!  I love you girls!

Welcome to our crazy family baby Bruce!  You’ve got a lot to live up to with a name like Bruce Wayne…not to mention you’ve been born into a family who openly admits you’ll have an uncle named Crazy Richard and and Aunt and Grandma who go by the alias – The Fruitcake Sisters!

I love ya already you little peanut!

Sammy of the Week : White Chocolate Wonder

I ran out of bread the other day but I desperately needed a PB Sammy for lunch so I decided to use some whole wheat English Muffins instead.  I often toast the muffins open-faced and smother them with Krema PB but this day my stomach was in need of some chocolate.  Apparently I hadn’t been shopping for awhile because I was also out of most varieties of my usual assortment of chocolate pieces.  But I did have a few Ghiradelli White Chocolate Chips tucked away and my stomach immediately screamed to my brain – “Please melt those WONDERFUL white chocolate pieces onto those muffins!!!!”  So my brain obeyed my stomach, as it often does, and proceeded to create what I’m calling a “White Chocolate Wonder” Sammy!  IMG_0025After the white choc pieces and the muffins turned a tad golden brown in my toaster oven, I spread the white choc around with a knife to create a thin, even layer.  Then I sliced one ripe banana (about four slices on each muffin), covered them in some all-natural, Krema Crunchy PB and even added a spoonful of raw honey to the top!  We only eat raw honey in our house (the kind in the jar that doesn’t squirt out of the head of a bear) so then I stuck the whole muffin back into the toaster oven just long enough for the PB and honey to melt all over the bananas.  With every bite my sweet-tooth of a stomach was shouting for joy as I discovered the ‘wonderful’ white chocolate surprise in the middle! IMG_0031Thank you stomach.  I was in a good mood all afternoon.  Cleaning that toaster oven was never so satisfying :-)

PB No-Bake Kisses

This is what my currently sleeping husband and children will see in the morning when they wake up on Valentine’s Day…IMG_0049

Cute right?  Let me explain.  My dad is a little “crazy” about more than one thing.  Besides PB & Chocolate (and a few other things;-)) he LOVES to celebrate!  Holidays, Anniversaries, Birthdays or other special occasions – he loves to celebrate them all!  My mother, my sister and I have been the fortunate beneficiaries of his ‘celebration obsession’ for years!**  That being said, the flowers, teddy bears and boxes of chocolates above are Valentine’s Day presents from my dad (Crazy Richard) to my girls (his only granddaughters).  Isn’t he awesome??  The only thing I can really take credit for are these…IMG_0048

PB No-Bake Kisses! Yum!  Here’s what you do…

Ingredients:
2 c. sugar
1/2 c. milk
1 stick oleo (shortening)
3 T. cocoa
1 tsp. vanilla
1/2 c. Krema creamy PB
3 c. oats

-Boil sugar, milk, oleo, cocoa and vanilla for 1 minute.  (Tip : shortening = gross in my cookbook so I ALWAYS use butter, which may cause some added difficulty making these kisses but in the end flavor is more important to me than presentation)IMG_0035
-Remove from heat
-Stir in PB and oatsIMG_0039
-Cut equal sized squares of aluminum foil and wax paper placing wax paper on top
-Place globs of oat mixture onto wax paper to cool and hardenIMG_0040

-Before these get too hard (just a few quick mins) fold up wax paper and foil into pyramid shape and place love note in the top (I used folded tissue paper)
-Then mold the foil around the glob of oat mixture until its shaped like a Hershey’s Kiss!  Viola!

Now I forgot the wax paper tonight (oops!) so my kisses aren’t going to be so easy to eat.  Oh well.  I have made these before with PB rice krispy treats and they worked awesomely.  Maybe for Father’s Day…

**Funny story about Crazy Richard: when my husband and I were first married my dad continued to be the wonderful, “crazy” dad that he is and sent me flowers and such for every Holiday and milestone in my life.  My poor husband just couldn’t compete!  Eventually my mother told my dad he needed to let the new man in my life be the one to buy me flowers.  That kind of was a little bit of a rough time for my dad…until I had my first little girl!  She turned into my very lucky replacement, and now I have two adorable girls who have been able to reap the benefits of Crazy Richard’s ‘celebration obsession’!

Happy Valentine’s Day!

♥ Kimberly
