Sammy of the Week : Grilled PB & Banana Split

I personally have been a long-time fan of grilled PB sammys, but recently I discovered this incredulous recipe from Cooking Light. Definitely my new favorite sammy…well, this week anyways ;-)

“This fun, kid-friendly indulgence was a hit at taste testing and received our highest rating. The recipe can easily be multiplied to make as many sandwiches as you need.”

Prep Time: 15 minutes
Cook Time: 8 minutes
Yield: 1 serving (serving size: 1 sandwich)

Ingredients

  • 2  (1-ounce) slices firm white sandwich bread, divided
  • 1  teaspoon butter, softened
  • 1  tablespoon all-natural KREMA creamy PB
  • 2  teaspoons honey
  • 1/2  teaspoon semisweet chocolate minichips
  • 1  large strawberry, thinly sliced
  • 1/2  small banana, cut lengthwise into 3 slices (about 2 ounces)
  • 1  tablespoon pineapple jam

Preparation

Spread one side of each white bread slice with 1/2 teaspoon butter. Combine peanut butter and honey; spread over plain side of 1 bread slice. Sprinkle with chocolate chips; top evenly with strawberry slices and banana slices.

Spread pineapple jam over plain side of remaining bread slice. Carefully assemble sandwich.

Heat a small nonstick skillet over medium-high heat. Add sandwich; cook 2 minutes on each side or until lightly browned.

One of those days…

Its just one of those days…actually, its been just one of those weeks!  Sickness has been in our house for some time.  So, on days like today – I often need a shot of some antioxidant rich dark chocolate.  Instead of reaching for something totally unhealthy like a candy bar, I just mixed up this quick and satisfying snack in just a few seconds!

Combine 1/8 cup of dark chocolate pieces, 1/8 cup of all-natural Krema crunchy PB, and 1/4 cup of rolled oats.  What a great pick me up with minimal prep and cleanup :-)

Product Review : Back To Nature Granola

If you have a healthy packaged granola, then adding a couple of spoonfuls of Krema PB is a great way to give it some protein and flavor.  I really like granola by Back to Nature.  We eat this granola almost daily at my house.  My girls like the ‘Classic Granola‘ variety and my flavor of choice these days is ‘Sunflower and Pumpkin Seed.’  All of the nine varieties are made with wholesome whole grain oats and only lightly sweetened with natural fruit and cane juices.  The ‘Chocolate Delight Granola‘ comes with heart-healthy chocolate pieces in it already!  Just add some Krema PB!!!

Party Planning? Think PB!

Hi Friends!  Are you throwing a party soon?  Like for Memorial Day?  Or maybe you’re planning a wedding or shower?  Well, if you’re not, then you might want to start planning a party just so you could use one of these…

That’s right, it’s a Peanut Butter Fountain!  My family has a love/hate relationship with chocolate – meaning we all LOVE chocolate but HATE the added pounds we get from consuming it in such massive quantities (which is soooo easy when your mom owns a candy store full of gourmet chocolates!)  Well, try this idea instead of the traditional chocolate fountain at your next party!

Peanut Butter Fountain Recipe (from knol.google.com)

- 3 lbs cream cheese (room temp)

- 3 cups white sugar

- 4 cups all-natural Krema creamy PB

- 1/2 teaspoon salt

- 2 cups milk

In a mixer, combine cream cheese and sugar until smooth. Mix in the peanut butter and salt. Add the milk, 1 cup at a time. Thin with additional milk as needed. Serve fondue at room temperature to avoid changes in consistency.

Yield: Makes enough for the largest home fountains.

Suggested dipping items:  Angel Food cake, Chocolate-covered pretzels, Marshmallows, Molasses cookies, Oreos, Bananas, Brownie Bites, Apple slices

A Tip: Before dipping apples in the fondue, drop them briefly into boiling water. This removes the wax coating and allows the fondue to stick better.

Choc Chip Cupcakes W/ Krema PB Frosting

I think ya’ll may be wondering where in the world I have run off too (or then again, maybe you haven’t noticed that I haven’t been around ;) ) …in any case the truth of the matter is that I haven’ run anywhere.  I have in fact been just a few feet away from my computer for the past 5 days straight – I’ve been sick in bed!  Well, I guess not the whole time.  But my girls each took a night or two sick with the stomach flu and then my husband and I were sick as well!  Gross!  Before I go into more details than necessary and you begin to feel sick yourself, let me tell you what my cousin Meryn and her adorable daughter were whipping up this weekend… Chocolate Chip Cupcakes with Krema PB Frosting!195

Meryn said she first got this idea when she was watching the Food Network and saw these beauties on display…

Since Meryn is a busy mom she decided to try this PB Frosting recipe on some of her own chocolate cupcakes.  The results were fabulous!  Her family couldn’t stop eating them!  198

Here’s the Krema PB frosting recipe…

  • 1 cup confectioners’ sugar
  • 1 cup creamy peanut butter (Uh, that is KREMA PB, of course ;-) )
  • 5 tablespoons unsalted butter, at room temperature
  • 3/4 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 1/3 cup heavy cream
Place the confectioners’ sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth.  You can get the Food Network’s original cupcake recipe here.

Meryn added her own special touch by throwing in a handful of chocolate chips to the cupcake batter just before placing them in the oven. What a clever girl!  I love it!  I can’t wait until I’m feeling better myself…you KNOW I will be trying this recipe out!!

PB Choc Chip Marbled Banana Bread

Wow.  That title is a mouthful!  But once you make this banana bread – your mouth will be full of something much yummier!  hehe ;)   Here’s what I did…

4 T softened butter
1/4 C unsweetened, organic applesauce
2 eggs
2 T skim milk or water
3/4 C light brown sugar
1 C mashed ripe organic bananas (2-3 medium bananas)
1 3/4 C King Arthur Whole Wheat Flour
2 t baking powder
1/2 t baking soda
1/4 t salt (optional)
1/2 C Krema Creamy Peanut Butter
1/3 C dark chocolate chips
1/8 C unsweetened cocoa powder

Beat butter, applesauce, eggs, milk and brown sugar in large mixer bowl until smooth.  Add mashed bananas and blend at low speed; beat at high speed 1 to 2 minutes.  Combine flour, baking powder, baking soda, and salt; mix into batter.  Add PB and chocolate chips.

Divide batter in half, beat in cocoa powder to one haft until combined.  Alternate pouring the two batters into a greased loaf pan 8 x 4 x 2 inches; then take a clean knife and make just a few swirls to marble the cocoa batter with the plain.  Top with additional chocolate chips if desired.

Bake at 350 degrees until bread is golden brown and toothpick inserted comes out clean (about 55 to 60 minutes).  Cool in pan on wire rack 10 minutes; remove from pan and cool to room temp or cut off a slice and eat it warm :-) pb choc chip marble banana bread
