Spicy PB Chicken & Quinoa Salad

I just kind of made up this dinner last night for my family and some of our friends and they all flipped!  Everyone loved it and had two or three helpings!  Even the kids!
I was soooo pleasantly surprised, so I’m sharing :-)

First I made a Quinoa Salad.  My awesome cousin Mallory (one of my Aunt Nanette’s daughters) introduced me to the fabulous whole-grain product: Quinoa (pronounced keen-wah).  This pseudocereal is a whole-grain product which can easily be substituted for rice in almost any recipe.  My Quinoa Salad:

Its pretty simple.  Wash quinoa.  Cook quinoa in rice cooker.  Add chopped veggies.  Refrigerate.  That’s it!
I added red pepper, red onion, and leeks and a bunch of cooked, shelled edamame – but you can add just about anything, nuts, seeds, craisins, or other raw veggies :)

My Easy Green Beans:

I also cooked up some green beans separately.  I used organic, frozen green beans – and our favorite way to cook them is super easy : throw the frozen green beans in a large, deep skillet over medium heat, add a tablespoon of peanut oil and season with garlic salt and pepper!  Voila!  Easy veggie side in just a few minutes.

Nanette’s Spicy PB Chicken:

1/4 c Hot & Spicy Krema PB
1/3 c + 1 Tbs. light soy sauce
2 Tbs. sugar
1/3 c peanut oil
chunk chicken (any will do; cut up breasts, rotisserie, canned chicken)

Mix all ingredients together in order.  It helps to warm up the PB mixture to ease in the stirring process ;)

(or you could just use creamy Krema PB and add some cayenne pepper and hot Hungarian paprika to get that special ‘kick’)

The Spicy PB Chicken and Quinoa Salads can be made in advance and refrigerated.  Just whip up the green beans (or not) and combine them all!
Can be eaten cold or hot!

Gliding Calm

One of those days…

Its just one of those days…actually, its been just one of those weeks!  Sickness has been in our house for some time.  So, on days like today – I often need a shot of some antioxidant rich dark chocolate.  Instead of reaching for something totally unhealthy like a candy bar, I just mixed up this quick and satisfying snack in just a few seconds!

Combine 1/8 cup of dark chocolate pieces, 1/8 cup of all-natural Krema crunchy PB, and 1/4 cup of rolled oats.  What a great pick me up with minimal prep and cleanup :-)

Product Review : Back To Nature Granola

If you have a healthy packaged granola, then adding a couple of spoonfuls of Krema PB is a great way to give it some protein and flavor.  I really like granola by Back to Nature.  We eat this granola almost daily at my house.  My girls like the ‘Classic Granola‘ variety and my flavor of choice these days is ‘Sunflower and Pumpkin Seed.’  All of the nine varieties are made with wholesome whole grain oats and only lightly sweetened with natural fruit and cane juices.  The ‘Chocolate Delight Granola‘ comes with heart-healthy chocolate pieces in it already!  Just add some Krema PB!!!

Sammy of the Week : PB & BlueAgaveBerry

This sammy idea came to me in the kitchen as I was trying to decide how to incorporate my fresh, organic blueberries into my lunch, so voila!  Here you go… :o

First make your own ‘BlueAgaveBerry’ sauce by gently warm up 1 cup of blueberries either in a broiler or microwave until they are just bubbling.  Put them in a bowl and smash them up with a fork, then stir in 1 1/2 tsp. Organic Raw Blue Agave (see my review below).  Spread 3/4 cup of Krema all-natural PB onto whole wheat bread and pour the ‘BlueAgaveBerry’ on top!  And yes, I totally made that word up.  Its a combination of two incredible ingredients; blue agave nectar and blueberries. pb bb smashThen I added some overly ripe banana slices and another piece of bread to close it off.  I just LOVE it when my PB sammy’s are warm and gooey :-) pb bb smash

This sammy is so fabulous because every component is a single ingredient product!  (besides the bread ;)Krema PB: peanuts, Blue Agave: agave nectar, Blueberries & Bananas! Who needs blueberry jam in a jar full of high-fructose corn syrup (GASP!) and other yucky additives and fillers when you can smash up your own fresh blueberries and add a little natural sweetener (or not) and get better tasting and much better for you results?  Honestly!  Yet another reason why I love Krema and Crazy Richard’s PB.  Its ALL-NATURAL!  Why add unnecessary junk (like salt, trans-fats, hydrogenated oils and refined sugar) to a perfect product Mother Nature worked so hard to create?  Try this.  Its healthy, SIMPLE and delicious ;-)

Product Review : Wholesome Sweeteners – Organic Raw Blue Agave
Made from the nectar extracted from the core of the Blue Agave plant, this sweetener is awesome.  It won’t crystallize, it dissolves easily and though it is 25% sweeter than sugar, its flavor is non-threatening and not overpowering.  The glycemic index is 39 or less so it would be great for people who have to watch their blood sugar.  I’ve used it on fresh fruit, in dressings, desserts, baked goods and in my tea as a sugar or honey substitute.  This company also offers other flavors and syrups and sugars which I’ll blog about another time.  But my new ‘BlueAgaveBerry’ sauce was incredible!!  (according to me anyways ; -))
