Choc Chip Cupcakes W/ Krema PB Frosting
I think ya’ll may be wondering where in the world I have run off too (or then again, maybe you haven’t noticed that I haven’t been around
) …in any case the truth of the matter is that I haven’ run anywhere. I have in fact been just a few feet away from my computer for the past 5 days straight – I’ve been sick in bed! Well, I guess not the whole time. But my girls each took a night or two sick with the stomach flu and then my husband and I were sick as well! Gross! Before I go into more details than necessary and you begin to feel sick yourself, let me tell you what my cousin Meryn and her adorable daughter were whipping up this weekend… Chocolate Chip Cupcakes with Krema PB Frosting!
Meryn said she first got this idea when she was watching the Food Network and saw these beauties on display…

Since Meryn is a busy mom she decided to try this PB Frosting recipe on some of her own chocolate cupcakes. The results were fabulous! Her family couldn’t stop eating them! 
Here’s the Krema PB frosting recipe…
- 1 cup confectioners’ sugar

1 cup creamy peanut butter (Uh, that is KREMA PB, of course
)
- 5 tablespoons unsalted butter, at room temperature
- 3/4 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 1/3 cup heavy cream
Meryn added her own special touch by throwing in a handful of chocolate chips to the cupcake batter just before placing them in the oven. What a clever girl! I love it! I can’t wait until I’m feeling better myself…you KNOW I will be trying this recipe out!!
